Lamb is red meat like beef. Cook it medium or medium rare but serve it hot immediately after cooking. If it starts to cool, the fat congeals and gets smelly.

What me wife read was get it to 130 internally which took twice as long as the time it said, then let it rest for 15 minutes.

Letting it rest is ok, just not too long. Normally I don’t bother. But then I only make it once a year or so.
